Louisiana Sweet Potato Pancakes will take 30 minutes to cook.
¾ Pound sweet potatoes
1 and half Cups all-purpose flour
3 half Teaspoons baking powder
One Teaspoon salt
Half Teaspoon ground nutmeg
1 and half Cups milk
¼ Cup melted butter
Put sweet potatoes in a medium size pan of hot water and cook until soft, about 15 minutes.
Drain the water and immediately put in the cold water for easy removal of skins.
Now remove skins,chop the potatoes and mash well.
In a bowl,mix together flour,salt,nutmeg and baking powder.
Mix well mashed potatoes,milk,butter and egg in a separate in-between size bowl.
Now mix sweet potato mixture in the flour mixture to form a required consistency batter.
Preheat the pan over medium heat.
Pour batter onto the prepared pan with the help of tablespoon and cook until golden brownish turning once with a spatula when the surface begins to bubble.
