Chips and Fish

Ingredients you will require for the Chips and Fish

For the fries:

Safflower oil, 1 gallon

Russet potatoes, 4 and large

Salt to taste

For the batter:

2 cups of flour

Baking powder, 1 tbsp

1 teaspoon kosher salt

Bay for Seasoning

Brown beer, 1 bottle

1 1/2 pounds whitefish, cut into strips

Cornstarch

Steps

Heat the oil in the oven at 320 degrees.

Cut the slices of the potato without removing the skin and put in bowl of cold water.

Combine together the baking soda, bay seasoning, salt, flour and cayenne pepper.Pour in the beer and stir until a smooth paste is formed.

Chill the mixture for 15 minutes. (Its prefer able if you make this batter 30 minutes or a hour ago)

Now for the potatoes remove the water from the bowl.

When oil is evenly heated at 325 degrees put in the potato slices.

Do the same in portions and fry for 3-5 minutes until the potatoes are pale.At the end drain from the oil.

Again heat the oil to 375 degrees and again fry the fries till they are crispy.

Drain on the rack.

Sprinkle with the salt.

Now dip the fish in the cornstarch then dip in the batter and fry.

Do this to all in portions, Flip the piece constantly and when brown drain the oil.

Serve with vinegar.
