How to bake Pineapple Sweet Potato Muffins

Ingredients Pineapple sweet potato muffins

Pineapple sweet potato muffins is included in cake recipe.



One cup cut canned Louisiana yams

One can chops pineapple (8 ounce),

one tsp orange zest

2/3 cup sugar

Two eggs

Half cup walnuts, crushed

Two cups all purpose flour

One tbsp baking powder

One tsp baking soda

Half tsp salt

Pineapple sweet potato muffins

Directions Pineapple sweet potato muffins

Preheat oven to 375 F or 190 degree C.

In a intermediate size bowl,combine pineapple,sweet potatoes,eggs,orange zest, and sugar.

Stir all ingredients until combined.

Stir in walnuts.

In a large size bowl mix flour,salt,baking powder and soda.

Pour wet ingredients on the dry ingredients and mix til the dry ingredients are just wet.

Do not cover.

Spray the muffin molds with nonstick cooking spray.

Pour about half cup batter in each cup.

If there is no more batter to fill the tin, pour in small amount of water in the empty ones.

Baking time for muffins is 16 to 20 minutes.
