Ingredients for Chicken Fajita Roll-Ups
For marinade of Chicken Fajita Roll-Ups
2 Tbsp of olive oil
Juice of half lemon
1 minced garlic clove
1 Tsp of chili powder
Half Tsp of cumin
Pinch of cayenne pepper
Half Tsp of dried oregano
2 Tbsp chopped cilantro
Half tsp salt
Half sliced red bell pepper
3 chicken breast
1/2 sliced yellow bell pepper
Half sliced green bell pepper
Steps for baking Chicken Fajita Roll-Ups
In a small bowl,whisk together olive oil, lime, garlic, chili powder, cumin, oregano, salt, cilantro and cayenne (if using).set aside.
For the chicken breasts,if you purchased pre sliced chicken cutlets then skip to next step.
If using chicken breast slice them long way into 2 even slices and firmly pound the chicken using the smooth side of the meat tenderizer to an even thickness of about 1/4 inch.
Place the chicken cutlets into large resealable freezer bag and pour marinade over top, making sure they are completely coated.
Allow chicken to marinate for minimum of one hour to overnight.
Once chicken has marinated, evenly place six bell pepper slices in the middle of the chicken cutlet,roll uo and secure with toothpick.
Repeat this step until all cutlets have been rolled up and place seam side down in prepared baking dish.
Brush tops of the chicken with remaining marinade.
Bake uncovered at 375 C for about 25 to 30 minutes or until the juices run clear.
Chicken Fajita Roll-Ups are ready to serve.
